The name "APi CAE" comes from a collection of cooking manuscripts by the same name, thought to have been compiled in Roman Italy during the late 4th, early 5th century AD.
Marcus Gavius Apicius, a Roman gourmet and lover of refined luxury, is rumoured to be the author of these API CAE manuscripts.
Due to this, APi CAE has a long association with the love of fine food. Deemed the only remaining records of traditional Italian food preparatory methods, the name is a great representation of our philosophy.
